Perfect with Chandelle's Estraié Affaire White Wine
One Hour Total Time (about 10 minutes or so active)

Serves 4

Ingredients

4 garlic cloves finely chopped
2 heads Garlic (Optional but great), halved crosswise
1 tablespoon chopped fresh rosemary, plus 3 sprigs
1 tablespoon fennel seeds, chopped coarsely
1½ teaspoons coarse salt
2 tablespoons olive oil, divided
Freshly ground black pepper
1 to 1½-lb. pork tenderloin
4 slices bacon

Preheat oven to 425°. Toss chopped garlic, chopped rosemary, fennel seeds, salt, and 1 Tbsp. oil in a small bowl; season with pepper.
Rub garlic mixture all over tenderloin sooner the better; refrigerate pork until dinner. Morning to night is perfect.
Place rosemary sprigs in a large baking dish
and place tenderloin on top. Wrap the bacon slices around tenderloin, tucking loose ends under
to hold the bacon . Place halved heads of garlic next to tenderloin and drizzle all with remaining 1 Tbsp. oil.
Roast until an instant-read thermometer inserted into thickest part of tenderloin registers 145° for medium, about 40–45 minutes.
Remove and transfer to a cutting board and rest at least 10 minutes before slicing.

A Favorite Recipe for pairing with our Estraié Sortie Red Wine

steak_wineThe wonderful aromas and flavors of our Estraié Sortie Red Wine is just great with this spice rub and the slightly tart lime butter that melts into these grilled rib eyes. It is almost always a good idea to let red wine breathe and open up before enjoying, so go ahead and open and pour the Estraié into glasses or into a decanter before you begin. The rich, dark plum flavors will release and be ready to enjoy with your steaks.

A Favorite Recipe for pairing with our Estraié Affaire

Ingredients

  • 4 (1 1/12-inch thick) center cut, bone in pork chops
  • Kosher Salt
  • Fresh Ground Pepper
  • Cilantro Pesto (follows)

Preperation

  1. Season Pork Chops with salt and pepper. Rest at room temperature while the grill heats
  2. Heat grill to medium high heat. Oil the grate and then grill chops 8-9 minutes per side or until done.
  3. Remove from heat and let rest for 5 minutes. Serve with Cilantro Pesto.

Cilantro Pesto
Adjust texture to suit by adding more olive oil if you choose

Makes about ¾ cup

Ingredients

  • ½ cup loosely packed fresh cilantro leaves
  • ½ cup loosely packed fresh flat-leaf parsley
  • 2 cloves garlic
  • ¼ cup good quality parmesan cheese
  • 2 tablespoons pine nuts, toasted
  • ¼ teaspoon salt
  • ¼ cup olive oil

Preperation

In a food processor, pulse first 6 ingredients 10 times or just until chopped. Slowly drizzle olive oil over mixture and pulse maybe 6 more times or until a coarse mixture forms. Cover and chill until ready to serve.

Shipping Information

How do we safely deliver wine directly to our customers?
We use special boxes to ship bottles of wine coast to coast. Each bottle is safe in its own compartment. We insure against damage, spoilage or loss during shipment. Unlike many other Internet shippers, in the rare situation of a problem requiring a claim concerning damage in shipment, we handle it. In many cases, we go ahead and replace an item while the claim is being processed.

Again, if you are not satisfied with your order, we will replace it or you may return if for a refund within 90 days.

Please share with us your special event date that the wine is required.

We are happy to hold your shipment for your desired delivery date. Order now, and we'll ship your wine later. In many situations we can offer you rush shipping at an additional charge, if required. Be sure to ask us about it.

Shipping Details
Each bottle weighs three pounds. A 12 bottle case weighs 36 pounds. We include insurance and special packaging. We cannot ship wine items to a PO Box or APO/FPO. A business or daytime address is best. We may require a delivery phone number.

Rates are based on shipping locations and package weight. Please call us and ask for current rates. When you order online, our Shopping Cart will automatically display the shipping charge for the wines you select. Rates are subject to periodic update.

Chandelle Wines are labeled and packed to your order.
Usually, from your order date to shipment takes about 4 business days (Monday - Friday, excluding Holidays). Ground shipment then adds up to 5 business days (Monday - Friday excluding Holidays) for Coast-to-Coast delivery. This could mean about 9 business days until your order is delivered.

Two Day Shipment upgrade means delivery TWO business days AFTER it leaves our warehouse. If you need Rush handling please let us know using the Comments section of the order form. There may be an additional charge for this service.

If you have a particular, specific date by which you need the wine by, please let us know upfront, even if it falls within the typical, but not guaranteed, delivery window.
